Chocolate Protein Muffins - #HighFiber, #LowSugar, #HighProtein


Are you looking to add more fiber to your food in a natural way?

Over the last few weeks, I've been looking for high protein, high fiber treats that don't have a lot of sugar. There are many recipes out there. I ran across a recipe that mixes prunes and applesauce together that adds more fiber to any recipe.

Then I started looking at protein muffin recipes, ones that substitute applesauce to lower sugar.

Again, they didn't meet what I wanted in the amount of protein I thought they should, so I had to modify the recipes.  This chocolate protein muffins is what I 've come up with.

chocolate Protein Muffins
(RECIPE) 

INGREDIENTS

·        6 Tablespoons unsweetened cocoa powder

·        1/2 cup chocolate protein powder

·        1 cups flour

·        1/2 cup ground flax seed

·        1/2 cup brown sugar

·        1 teaspoon baking powder

·        2 teaspoons baking soda

·        4 large eggs

·        1 cup half and half

·        1 1/2 cups applesauce/prune mix (see below)

·        2 teaspoon vanilla extract

·        2 Tablespoon butter

·        1/2 cup semisweet chocolate chips

INSTRUCTIONS

1.     Preheat oven to 400 degrees F.

2.     Line muffin tins with cupcake liners or spray with nonstick cooking spray.

3.     In a large mixing bowl, combine cocoa powder, protein powder, flour, brown sugar, baking powder and baking soda.

4.     Melt butter add to mix first, then add half and half, eggs, applesauce/prune, vanilla, and chocolate chips until well combined.

5.     Fill each cupcake liner about 2/3 of the way full.

6.     If you like nuts sprinkle a few on top of each muffin before baking.

7.     Bake for 20 minutes or until set in the center.

Applesauce/ Prunes 

Mix ¾ cup of applesauce and ¾ cup of prunes. 
Put in a food processor 


Work together until smooth.

I've copied this out - gonna buy a couple of ingredients - don't happen to have any prunes in the house - lol - and then I'm going to make these.

In your recipe - at the bottom
Applesauce/ Prunes

Mix ¾ cup of apple and ¾ cup of prunes.
Put in a food processor
Work together until smooth.

the line mix 3/4 cup apple - that should be applesauce?????
